Is your feature request related to a problem or use-case? Please describe.

Since Tekton v0.49, the V1 API version is the new stored version. We should use this to omit the conversion webhook to be in the picture.

Describe the solution that you would like.

Change everything inside this repository to use the v1 API when interactig with PipelineRuns. Out of my head, I do not think we work with other Tekton artifacts which are at V1 level in this repository. The Run is still Beta.
