Support for having multiple indexes in a VectorStore

Description

This is a Proof Of Concept for supporting multiple vector indexes in a vector store.
The purpose is to make the behavior more intuitive as well as opening up for building more complex index structures, more easily.

This will work as expected now:
patient_index = VectorStore.from_documents(patient_records)
hospital_procedures_index = VectorStore.from_documents(hospital_procedures_docs)
