Migrating 'latest-version' from 5.1.0 to 7.0.0. New version uses ESM instead of CommonJS. A new script has been added to allow 'latest-version' to be updated.

This pull request updates the 'latest-version' version from 5.1.0 to 7.0.0 in the package.json file.
The new version does not support CommonJS, but it supports ESM. For this reason a new script has been implemented in order to allow 'latest-version' to be updated. The new script, 'adapt-cjs-to-esm.js', reads the file content from 'dist/release/tasks/get-packages.js', replaces the statement with a new one, and writes the updated content back to the file. Overall, this pull request ensures that the project is updated to use the latest version of 'latest-version' and is compatible with ESM.
