distrobox is not working so I'm using the github actions as my testing ;-;

We need to explicitly set which wlroots version to use when compiling, fixing the build errors.

Take a look at the PKGBUILD for our previous swayfx version, don't really remember the variable name on the top of my head 😅

upstream sway did this: export PKG_CONFIG_PATH='/usr/lib/wlroots0.17/pkgconfig' in build()

after local tests this appears to fix it(basing off the changes Erik made) :)
