Replace Miniconda with Miniforge

Description

• Closes [Doc]: Incorrect link in getting started docs #726
• Miniforge is preferred over Miniconda because conda-forge is set as the default channel. It is also preferred for open-source software only, while Miniconda includes paid and proprietary software.

I hit errors compiling the docs (probably unrelated to this PR), but I did read through the partially rendered pages/changes. They look fine. Did you want me to run these commands (I didn't do this initially because I didn't want to affect my existing setup). I think if you are comfortable merging, I am good with this.
